update docs for GCP and AWS marketplace listings

thanks, @matifali - can I just remove the marketplace and references in the AWS EC2 doc and the GCP doc entirely, or can we replace it with other info?

@bpmct, I mean to ensure that screenshots and the links to the marketplace listing point to the correct links. Some of it is already resolved in #201 and coder/coder#16245 but we still need to verify and update screenshots where needed.

The Usage instructions referenced are part of the AWS Marketplace Product Version Meta-data. I just went into the Marketplace portal, and manually updated to what @ben Potter ***@***.***> specified above. It looks like there's some release automation in place to update the Marketplace product version & AMI, please review to ensure that is also updated to reflect this change (if necessary). Additionally, the screenshot at https://coder.com/docs/install/cloud/ec2 needs to be updated to use an image of the latest Marketplace product (e.g Coder, not Coder v2).
